Buddha Bowl

This buddha bowl just gave me life. – Lettuce – Japanese miso dressing – Boca Chik’n veggie patties – Chow mein noodles – Roasted shredded seaweed My number 3 child stayed home from school today because he felt sick, and then I started feeling sick. I ended up taking a nap, which isn’t a usual thing for me. I woke up with a fever. I finally got myself to eat lunch at around 3pm and felt better by the time I finished this satisfying salad. Jumped in the shower  ...

Annual Family Dinner

Since moving to Las Vegas, at the end of the year my in-laws take all of their sons and wives out to eat at a nice restaurant. Last year we we to Oishi, an all-you-can-eat sushi bar. This year we checked out Nabe Hotpot. It was a lot of fun — being that this was our (The Beefcake & I) first shabu experience, but i probably won’t go back again. Their broth wasn’t very tasty, the rice was under cooked, and they gave us sesame oil instead of tempura sauce for our shrimp  ...

The Sibling

My younger sibling has recently moved in with me, I’m excited and a little scared.  It happened all pretty quick.  The me a year ago would have said no to this plan, but I’ve done a ton of work on forgiving and I really do want to see Trice do better.  Since this change, we’ve been walking every morning at the park for about 2 hours.  It’s been nice, that’s how I got that shot of the ducks.  I even started playing Pokemon lol which gets me out of the house more  ...

Freedom

Our weekend was eventful, per usual. My younger sibling came up with Maria (the girlfriend), and we went one adventures.  Hit up a cool crystal shop near the strip, went to the indoor swap meet — wanted to fight the lady at the door, copped some of Conor McGregor’s whiskey and watched the fight, checked out Pure Aloha, and saw the nephews.  So we had full house since Trice was in town, and come Monday my house was quiet.  Our older two went to Utah for a month to spend time with my  ...

Calories Don’t Count When You Eat Asian

Today my daughter and I went grocery shopping at the asian markets and she wanted to hit up this brand new spot called Takopa, a Japanese Street Food joint. So like any ordinary mother would say to her young adult child, YOU PAY! It’s on Spring Mountain and Wynn, right by 99 Ranch Market. My daughter got the Shio Ramen, this one is a chicken based broth, she usually get the Tonkatsu Ramen from Izakaya Go (same owner) but I think this is going to be her new spot. It was so good! It  ...

A Sunday Well Spent Brings a Week of Content

I live for our Sunday mornings together. Not gonna lie, before going to church, our Sunday’s consisted of late starts, lazy energy and we all stayed in our own rooms majority of the day. Now we get up early, hit the town and go on adventures and find cool spots like this place. We actually didn’t go to church today, but we usually will drop off my oldest son — because he does Life Group with his friends in this morning and then they have Worship Practice (if you’re not  ...

Jesus Saves, I Spend

I did a little shopping today. Wanted to get some “religious” home decor. I use that word lightly just to make it easier for you to get what I’m talking about. I also gifted myself two new decks because I earned some extra money today. By the way, I want to shout out my sister-in-law, Maria, for blessing us up. Thank you, sissy! I’m so proud of all the progress you’ve been making with yourself and I can’t wait to see you and Trice next weekend. I’m  ...

Do You Even Devo, Bro?

I’m am 58 days deep into doing daily devotions and journaling about what I’m learning from the Bible and trying to apply these teachings to my life.  I feel so content and satiated — on a whole other level that I cannot even begin to explain.  If you would’ve told me last year around this time that I’d be going to church consistently, serving, and doing devotions, I would’ve called your crazy and probably laughed.  Almost 2 months into this and I feel like a  ...
